I finished my Camp Loopy Project Three last weekend! Just thought I should keep you in the loop, since I mentioned often enough that I might be in trouble on it. I will share photos next week, but last night’s Knit Nighters can vouch for me, since I had to show it off to them. How are you doing on your Camp projects? Sunday is the due date!
Loopy Elf Cathy brought in a delicious treat, recently. We have some really good cooks and bakers working here! As soon as I tried one, I knew you all would need the recipe, too. Easy to make and fun to share. The recipe comes from Melissa’s Southern Style Kitchen, and you will find a lot of other wonderful recipes on her blog, too!
Cathy’s Sea Salt Cinnamon Pralines
12 whole graham crackers
1 cup (2 sticks) butter
3/4 cup light brown sugar
1 tsp. sea salt
1 1/2 tsp. ground cinnamon
1 tsp pure vanilla extract
1 1/2 cup pecan pieces (can also use almond slivers or walnut pieces)
1/4 cup English Toffee bits
Preheat over to 350 degrees. Line a cookie sheet or jelly roll pan with parchment paper or foil, leaving an overhang so that you can lift it from the pan when done. (If you use foil, butter it generously.)
Lay the graham crackers out so they cover the pan, without overlapping.
In a pan, melt the butter, brown sugar and 1/4 tsp. sea salt. Bring to a boil and cook over medium heat for 2 minutes, stirring constantly. Remove from heat and add in the vanilla, cinnamon and pecan pieces. Stir until combined. Then pour the hot mixture over the crackers, spreading evenly until they are all covered. Sprinkle the toffee bits on top.
Bake for 10 minutes until bubbly. Remove and sprinkle the remaining 1/4 tsp. sea salt on top. Let cool completely and then chill. Use a sharp knife to but into desired shapes. Store chilled.

I am most looking forward to attending a sweet two year old’s birthday party! There will probably be about 20 little children there, most under the age of three. Oh, so cute!
Although it will be bittersweet, we are taking our daughter to college out of state. I think it will take some serious knitting to occupy me when I get home.
I’m looking forward to KNITTING! I have a sweater waiting for one more seam (*cough*and unpicking the neck bindoff and redoing it more loosely*cough*) and then I will have a genuine FO to show for myself! Beyond that, my husband has made a chocolate chip cookie recipe that requires letting the dough rest for 36 hours – I’m looking forward to those, too! (Sadly can’t eat them and knit at the same time. Oh the sacrifices we make for our craft!)

Looking forward to Monday when I can rest! Need to sell the previous house and this weekend is a designated work weekend to get it prepped with the exception of Monday. Monday is our day of rest this week. And my Camp Loopy project is in danger of not making the deadline!
