I finished my Camp Loopy Project Three last weekend! Just thought I should keep you in the loop, since I mentioned often enough that I might be in trouble on it. I will share photos next week, but last night’s Knit Nighters can vouch for me, since I had to show it off to them. How are you doing on your Camp projects? Sunday is the due date!
Loopy Elf Cathy brought in a delicious treat, recently. We have some really good cooks and bakers working here! As soon as I tried one, I knew you all would need the recipe, too. Easy to make and fun to share. The recipe comes from Melissa’s Southern Style Kitchen, and you will find a lot of other wonderful recipes on her blog, too!
Cathy’s Sea Salt Cinnamon Pralines
12 whole graham crackers
1 cup (2 sticks) butter
3/4 cup light brown sugar
1 tsp. sea salt
1 1/2 tsp. ground cinnamon
1 tsp pure vanilla extract
1 1/2 cup pecan pieces (can also use almond slivers or walnut pieces)
1/4 cup English Toffee bits
Preheat over to 350 degrees. Line a cookie sheet or jelly roll pan with parchment paper or foil, leaving an overhang so that you can lift it from the pan when done. (If you use foil, butter it generously.)
Lay the graham crackers out so they cover the pan, without overlapping.
In a pan, melt the butter, brown sugar and 1/4 tsp. sea salt. Bring to a boil and cook over medium heat for 2 minutes, stirring constantly. Remove from heat and add in the vanilla, cinnamon and pecan pieces. Stir until combined. Then pour the hot mixture over the crackers, spreading evenly until they are all covered. Sprinkle the toffee bits on top.
Bake for 10 minutes until bubbly. Remove and sprinkle the remaining 1/4 tsp. sea salt on top. Let cool completely and then chill. Use a sharp knife to but into desired shapes. Store chilled.

I just finished finished college finals last night, and I have to pack next week because we’re moving …. So I’m looking forward to a long weekend of knitting!! Almost finished with project 3 for Camp Loopy, and need to finish a pair of socks by end of month also.
I’m most looking forward to getting my voice back after it being in poor shape for teaching.

On Saturday, a day trip to Huachuca City to look at an RV.

Our “summer vacation” begins tomorrow. Hopefully, that also means plenty of knitting time.
I am looking forward to having more than just a few minutes at a time to work out how my new sewing machine works. The one I have been using I used for probably 35 years so it is difficult to get my brain to accept the differences. It was nice to practically be able to sew in my sleep and hope to get that friendly with this one. Catherine

After finishing my Camp Loopy Project, I’m looking forward to my husband coming home Sunday night. He’s been out of town for a week. Hope to have a fun family day on Monday before the kids go back to school.
I am looking forward to seeing my parents and brother and sister-in-law. My sister-in-law and myself catch up on our knitting projects.
Going to our state agricultural fair!! Fried dough, cows, rides and lots of people watching!!
The thing I’m most looking forward to this weekend is my first Saturday off work in two months! Hooray for a three day weekend!

This weekend I’m looking forward to finishing up a few UFOs laying around, and maybe catching up on some more “Breaking Bad” on Netflix.
There is so much to do around the house and in the yard but I hope to find time to work on holiday gift projects and catch up on sleep.

Thank you. We didn’t need to make that decision. Our baby passed away on her own Saturday morning. She lived a long life. She was a rescue, having lived the first 7 yrs as a breeder dog. We gave her lots of love, a warm home with good nutritious food and the medical care she desperately needed. Most of all she rescued us as much as we rescued her!
