Sea Salt Cinnamon Pralines and CONTEST #7!

I finished my Camp Loopy Project Three last weekend! Just thought I should keep you in the loop, since I mentioned often enough that I might be in trouble on it. I will share photos next week, but last night’s Knit Nighters can vouch for me, since I had to show it off to them. How are you doing on your Camp projects? Sunday is the due date!

Loopy Elf Cathy brought in a delicious treat, recently. We have some really good cooks and bakers working here! As soon as I tried one, I knew you all would need the recipe, too. Easy to make and fun to share. The recipe comes from Melissa’s Southern Style Kitchen, and you will find a lot of other wonderful recipes on her blog, too!

Sea Salt Praline BitesCathy’s Sea Salt Cinnamon Pralines

12 whole graham crackers
1 cup (2 sticks) butter
3/4 cup light brown sugar
1 tsp. sea salt
1 1/2 tsp. ground cinnamon
1 tsp pure vanilla extract
1 1/2 cup pecan pieces (can also use almond slivers or walnut pieces)
1/4 cup English Toffee bits

Preheat over to 350 degrees. Line a cookie sheet or jelly roll pan with parchment paper or foil, leaving an overhang so that you can lift it from the pan when done. (If you use foil, butter it generously.)

Lay the graham crackers out so they cover the pan, without overlapping.

In a pan, melt the butter, brown sugar and 1/4 tsp. sea salt. Bring to a boil and cook over medium heat for 2 minutes, stirring constantly. Remove from heat and add in the vanilla, cinnamon and pecan pieces. Stir until combined. Then pour the hot mixture over the crackers, spreading evenly until they are all covered. Sprinkle the toffee bits on top.

Bake for 10 minutes until bubbly. Remove and sprinkle the remaining 1/4 tsp. sea salt on top. Let cool completely and then chill. Use a sharp knife to but into desired shapes. Store chilled.

  2. Being off on Monday mainly but also spending the weekend at the lake with my folks. Tomorrow is their anniversary and we are going out to dinner to a fave seafood place. The rest of the time I’ll be relaxing on the porch, knitting, hooking, and maybe stitching. Thank goodness I finished up that never ending bind off for Amery. Done and DONE ! Finished all 3 CL projects – 2nd year in a row – YEAH ! Have a great weekend – Mel

  3. I think I am really looking forward to finally finishing a yard project that I have been slowly working on all summer. Maybe I can finally put in some iris to bloom next spring!

  4. I’m most looking forward to actually having time to spend knitting. After a mini vacation last weekend, seems like this week was spent doing catchup. And I really want to get my sweater finished to wear to Fling in 2 weeks!

  5. Getting together to knit with friends Sunday afternoon and waking up Monday morning and getting to stay home!

  6. I’m looking forward to finishing my knitting project for the summer (a linen T, still a couple of months to wear it in the South), catching up on sleep, and maybe switching over to knitting with wool again.

  7. We live in the SF Bay Area and flew to NYC and took the train to New Haven for a family’s wedding. Can’t wait to see everyone!

  8. Hopefully going to a play by a local actors theatre group with my family. And hopefully some time to relax this weekend before heading back to work for the new school year on Tuesday! Have a great weekend!

  9. I’m most looking forward to this weekend to be over. I just found out I have 3 full shifts this weekend at my part-time job. Covering for people who get a vacation. Also trying to finish my Camp Loopy project, so I really need to do the Dori.

  10. Oh, goodness, my answer is basically the same as yesterday. I’m most looking forward to the first Oregon Ducks football game of the season on Saturday. I have season tickets and will be cheering them on yet again! Go Ducks!!!

  11. No specific plans this weekend. Knitting, time with kids and husband, swimming. The weekend still makes me sigh and enjoy all I have!

  12. My “yoga” birthday party with family. My 4 year old grandson thinks all birthday parties need themes. When his Momma asked what kind of party I should have, he replied, “a yoga party.”

  13. I’m looking forward to Football Saturday! My BIL is a sports nut but always makes watching into a fun family event. He’s making biscuits and gravy for an early “kick off” tomorrow. And I’ll have plenty of time to work on (and hopefully finish!) my CL Project 3 while we hang out.

  14. I am hopefully (and somewhat desperately at this point) looking forward to knitting time–I need to finish my Camp Loopy Project #3, and for the first time in three years (four years?) I am afraid I may not make the deadline … I was laid low by an EVIL cold at the beginning of the month (too sick to knit–how bad is that?) and then school started (I’m a teacher), so really, it’s just been bad … fingers crossed and sacrifices prepared for the Knitting Goddesses/Gods!

  15. Time with the hubby on the golf course. We don’t play together very often and I like playing (golf) with him!

    I have been on the go all week, with a unplanned two day trip which included flying.

    Then a workehop that was scheduled which also included traveling to get to. Just got home and thinking a nap may solve the feeling of msybe I have just done too much this last week.

  18. I’ll be spending a good part of the weekend double knitting. I’m so slow at it so I’m hoping that spending many hours on it will increase my speed. There will also be TV and movie watching and podcast and audiobook listening.

  23. I’m going Antique shopping with a friend tomorrow and then hanging out and knitting. Today was spent down by the shore with seafood and shopping. The rest of the weekend, I hope to just relax and knit and spin.

  24. Saturday night my family and I will be attending a South Indian coming of age ceremony for a friend’s daughter. There will be plenty of good food, sweets, good company, and all the ladies will be dressed up in their colorful silk sarees and gold jewelry. It should be quite the event!

  25. Not doing anything for 2 whole days! Except maybe knit, of course. I have been working 12 hour days, 6 days a week for a while.

  26. Since my Camp project is now finished (woo hoo!!!) I hope to get to do some reading. One of my favorite authors has a new book out and I just got a notice from the library that a book I had reserved is ready to pick up. Maybe also a trip to the fair. The weather is supposed to be very nice for fair going. If I have to, I may do some cleaning that has been neglected for Camp knitting all summer.
