Sea Salt Cinnamon Pralines and CONTEST #7!

I finished my Camp Loopy Project Three last weekend! Just thought I should keep you in the loop, since I mentioned often enough that I might be in trouble on it. I will share photos next week, but last night’s Knit Nighters can vouch for me, since I had to show it off to them. How are you doing on your Camp projects? Sunday is the due date!

Loopy Elf Cathy brought in a delicious treat, recently. We have some really good cooks and bakers working here! As soon as I tried one, I knew you all would need the recipe, too. Easy to make and fun to share. The recipe comes from Melissa’s Southern Style Kitchen, and you will find a lot of other wonderful recipes on her blog, too!

Sea Salt Praline BitesCathy’s Sea Salt Cinnamon Pralines

12 whole graham crackers
1 cup (2 sticks) butter
3/4 cup light brown sugar
1 tsp. sea salt
1 1/2 tsp. ground cinnamon
1 tsp pure vanilla extract
1 1/2 cup pecan pieces (can also use almond slivers or walnut pieces)
1/4 cup English Toffee bits

Preheat over to 350 degrees. Line a cookie sheet or jelly roll pan with parchment paper or foil, leaving an overhang so that you can lift it from the pan when done. (If you use foil, butter it generously.)

Lay the graham crackers out so they cover the pan, without overlapping.

In a pan, melt the butter, brown sugar and 1/4 tsp. sea salt. Bring to a boil and cook over medium heat for 2 minutes, stirring constantly. Remove from heat and add in the vanilla, cinnamon and pecan pieces. Stir until combined. Then pour the hot mixture over the crackers, spreading evenly until they are all covered. Sprinkle the toffee bits on top.

Bake for 10 minutes until bubbly. Remove and sprinkle the remaining 1/4 tsp. sea salt on top. Let cool completely and then chill. Use a sharp knife to but into desired shapes. Store chilled.

  1. Still working on #3 – stupid me for thinking a 1300 yard shawl was a good idea this month! I foresee some Netflix binging and academic reading to accompany the knitting for most of the weekend.

  2. My younger brother will be coming into town for a family cookout. I have a ticket to Cincinnati’s Firework show, and of course, trying to finish knitting a Robert McCluskey inspired afghan for a co-worker’s soon-to-be baby.

  3. SLEEP as daughter just completed her first full week of second grade, weaving, knitting, shopping, hanging out with the family.

  4. I have had really busy weekends lately so I am looking forward to doing nothing but whatever I want, maybe knitting all day and watching TV.

  5. I’m still working on #3 too – I see long nights in my future this weekend. Thanks for sharing a such a yummy looking recipe. This will be great for late night knitting marathons.
    I’m most looking forward to helping my grandmother celebrate her 95th birthday. She is a knitter too, but not quite as much now that her eyesight is poor.

  8. Tomorrow, we are driving to Richmond to visit college daughter to take her iPhone which finally arrived (it’s only taken 3 weeks). We’re also taking her some other bits of home like coke, haluski, and her favorite teas. We can’t wait to see her! 🙂

  9. Ordering a DVD set of the entire Third Rock From the Sun show, FREE, with points from a website I belong to! I just hope they have some left when I become eligible tonite.

  10. Our plans aren’t glamorous, but we hope to get our front yard looking presentable again. It need mowing, weeding, and some dirt moving.

  11. I’m most looking forward to our garage sale tomorrow…..I have so much CRAP that I can’t wait to get rid of!

  12. I am looking forward to relaxing with my husband at the cabin this weekend… and maybe even mixing up a few pina coladas in the blender!

  13. This weekend…hmmm…I will be on the ambulance 20 hours, some each day. I guess I’ll look forward to sleeping in on Tuesday!

  14. I’m looking forward to catching up on some sleep! I’m still recovering from knee surgery 5 weeks ago and this was my first week back at work full time! I’m also hoping our family makes homemade peach ice cream this weekend.

  15. I’m looking forward to finishing my project and uploading a picture on the Loopy website! I’m almost finished…been kinda sick these last two weeks and my knitting mojo wasn’t up to snuff, but now I can see the finished line!

  16. We have a treat at spin group on Saturday-Wanda Jenkins of THE Jenkins spindles will be there to visit and will be bringing some spindles for us to purchase. I’m looking forward to doing some spinning, which got neglected for project 3.

  17. Helping my daughter and family move into their first house. Obviously I’m very happy for them, but not really looking forward to a weekend of packing and moving. It’s quite possible I may even sweat…..which is illegal in my mind! On the bright side, college football season begins!!

  18. I’m looking forward to a day off from work on Monday, and using the time to put my family room back together after months of refurbishing it! And to watching Doctor Who with my grown-up daughter…

  19. I’m looking forward to riding my horse with the blessedly cooler temperatures that we are supposed to have!

  20. Sharing time with my daughter before she flies to Amman, Jordan. Then hearing from her upon her arrival. May God grant her safe travel.

  21. Hoping to take the kids to Water Country USA and Busch Gardens Williamsburg. This is our last weekend to use our summer passes, so I want to make sure we get in one more day of fun before they expire!
