Sea Salt Cinnamon Pralines and CONTEST #7!

I finished my Camp Loopy Project Three last weekend! Just thought I should keep you in the loop, since I mentioned often enough that I might be in trouble on it. I will share photos next week, but last night’s Knit Nighters can vouch for me, since I had to show it off to them. How are you doing on your Camp projects? Sunday is the due date!

Loopy Elf Cathy brought in a delicious treat, recently. We have some really good cooks and bakers working here! As soon as I tried one, I knew you all would need the recipe, too. Easy to make and fun to share. The recipe comes from Melissa’s Southern Style Kitchen, and you will find a lot of other wonderful recipes on her blog, too!

Sea Salt Praline BitesCathy’s Sea Salt Cinnamon Pralines

12 whole graham crackers
1 cup (2 sticks) butter
3/4 cup light brown sugar
1 tsp. sea salt
1 1/2 tsp. ground cinnamon
1 tsp pure vanilla extract
1 1/2 cup pecan pieces (can also use almond slivers or walnut pieces)
1/4 cup English Toffee bits

Preheat over to 350 degrees. Line a cookie sheet or jelly roll pan with parchment paper or foil, leaving an overhang so that you can lift it from the pan when done. (If you use foil, butter it generously.)

Lay the graham crackers out so they cover the pan, without overlapping.

In a pan, melt the butter, brown sugar and 1/4 tsp. sea salt. Bring to a boil and cook over medium heat for 2 minutes, stirring constantly. Remove from heat and add in the vanilla, cinnamon and pecan pieces. Stir until combined. Then pour the hot mixture over the crackers, spreading evenly until they are all covered. Sprinkle the toffee bits on top.

Bake for 10 minutes until bubbly. Remove and sprinkle the remaining 1/4 tsp. sea salt on top. Let cool completely and then chill. Use a sharp knife to but into desired shapes. Store chilled.

  1. I am most looking forward to seeing my beautiful, pregnant sister and spending the weekend in gorgeous Santa Barbara with her.

  2. I’m looking forward to spending an evening with a group of good friends, and introducing them to my new grandson, whose parents have promised to allow him to make a cameo appearance. These friends are the “family we chose” so it is especially exciting for them to meet him.

  3. This weekend I’m going to go on a much needed date night with my husband! We have four kids ages 7, 4, 3, and 1 which means we don’t go out much so I’m really going to treasure it. 🙂

  4. My friend is having her 80th birthday party tonight. And still going to work every weekend vending at quilt shows round the country. and on the days in-between, hand dyeing her fabrics for the quilt shows.

  5. I am so looking forward to a little family time this weekend. My cousin who lives in NY will be attending the golf championship in MA this weekend,close enough that we will be meeting her for dinner. Also, this is a good quiet weekend for me to work on at least one of my many unfinished knitting projects. Quiet time and family!

  6. I am most looking forward to spending time with my husband while knitting, cleaning, cooking, doing errands, and going to the Lego store to pick up a set I’ve been wanting for a long time.

  7. This weekend I am looking forward to hopefully finishing a shawl that I have been working on for a Christmas gift for my sil.

  8. I’m looking forward to recovering from my recent travels! Two trips – neither very far away – left me tired!

  9. Looking forward to relaxing at home, knitting, sewing, watching football, and doing some laundry before kids fill my classroom on Tuesday.

  10. I am looking forward to canning some salsa from our garden tomatoes and tomatillos, and maybe going to the local apple orchard for some early apples to can apple sauce! Also, casting on for a fall hat for my little guy.

  11. I’m looking forward to the very long drive back to Wisconsin to see my grandchildren. Hours and hours in the car mean finished socks and a new infinity scarf started!

  12. I am looking forward to finishing my Loopy Camp Project #3 and trying it on along with a 3 day weekend. I am also looking forward to BBQ this weekend with ribs on the menu. Yummmm!

  19. We are moving our youngest out of one apartment into another. She finally found a permanent full-time job. I will be so thankful when she is settled. So, what do I look forward to this weekend? Getting back home after moving her.

  20. I am hoping my back continues to feel better so that I can sit in one position long enough to knit again. I haven’t been able to knit since I hurt my back about 2 weeks ago.
