Coconut Curry Chicken (Winter Comfort!)

I know we have Loopy friends in all parts of the world and not all of you are experiencing cold weather right now. But even if you don’t need some winter comfort, you still might like this delicious recipe for Coconut Curry Chicken that my friend Cathy shared with me!

Cathy’s Coconut Curry Chicken

Coconut Curry Chicken

3 boneless, skinless chicken breasts, but into 1″ cubes
1 Tbls. olive oil
1 medium diced onion
1 tsp. salt
2 tsp. curry powder
1 (14 oz) can coconut milk
1 cup canned, diced tomatoes
2 Tbls. tomato paste
3 cups baby spinach
2 cups cooked riced

Directions: Heat olive oil and salt in a large skillet. Add the onion and sauté until translucent. Add in the curry powder and stir to coat the onions.

Add in the coconut milk, tomatoes and tomato paste. Let sauce thicken slightly for 5 minutes, stirring occasionally.

Add in the pieces of chicken and simmer for 6-7 minutes, or until the chicken is cooked through. Stir in the spinach and allow to cook until the spinach is wilted.

Serve warm over cooked rice.
