Storms

It has been stormy and windy here this week! Although the worst of it was south of us – more towards Denver and Castle Rock. Here’s a picture of a storm front approaching, from WH’s camera. I like the cracked earth between the rows. Although that just highlights how dry things are here.

This is almost ghostly, isn’t it? Wind currents sweeping around in the tall grass.

Last night we had a pretty impressive display of lightening across the sky. No thunder – just lots of lightening and wind. It was pretty cool.

I wanted to share a new salad recipe with you. It was so quick to throw together andit was a delicious evening meal.

Strawberry-chicken-saladStrawberry Chicken Salad

1 head of romaine (in bite-sized pieces)
4 grilled chicken breasts (cut into 1″ pieces)
1/2 sliced purple onion
2 avocados, sliced
Strawberries, sliced

Dress with Balsamic Vinaigrette (or Brianna’s Blush Wine Vinaigrette, if you have that in your local grocery store.)

  1. I say yum to the salad but DS who is sitting on my lap at the moment said “Eeeuw’. Need to figure out how to get him to eat more healthy stuff 🙂

  2. Some doozy weather and hail here in Conifer, too, the last few days. Great pictures, the tall grass shot almost looks like an Impressionist painting – gorgeous! (And it makes me have grass/pasture envy – here we just have rocks.)

  3. I’m just thinking “I have to make that and soon” I love mandarin oranges in salads but hadn’t thought of using strawberries…..why not?

  4. I didn’t realize it had been that dry there in the fields! That reminds me of some areas of Oklahoma last summer — not good for the farmers. 🙁 We’ve had timely rains so far and June this year has been vastly different than June of 2011.

  5. The salad is a combo that is very popular in our house. We use mixed spring greens rather than the romaine, but the effect is similar.

    I do love a great thunder and lightening storm. Unless driven in my the rain, a storm will find me on the patio, taking in the majesty.

    I just heard on our evening news here in Oklahoma that fires were as close as 15 miles to Ft Collins!! YIKES!!
