Coffee, Cake, and Snow

DSC03403Doesn’t that sound like a wonderful combination? I found a new coffee that I like. Cameron’s Chocolate Caramel Brownie. It might be the only coffee we brew at Loopy Central from now on, as we’re pretty much all in agreement that it’s wonderful. This morning, I brought in a coffee cake, still warm from the oven. It just seemed like the right thing to do, given that it’s cold and rainy and will be turning to snow in a couple of hours. And you know what that means? Hunkering down in my warm house tonight with a pile of knitting and a list of good movies to watch. And maybe another cup of that coffee. I’m sure WH will be in agreement.

DSC03404Pecan Cinnamon Surprise

1 (18 oz) white or yellow cake mix
1 cup vegetable oil
4 eggs
1 cup sour cream
3/4 cup sugar
2 tsp. ground cinnamon
2 cups chopped pecans
1 cup chocolate chips (optional)

Preheat oven to 350 degrees. Grease 9 x 13 pan.

Combine cake mix, oil, eggs and sour cream and beat for 2 minutes at slow speed with a mixer.

Mix sugar, cinnamon and pecans in a separate bowl.

Pour 1/2 of the batter into the pan. Top with 1/2 of the pecan/sugar/cinnamon mix. Spread 1 cup of chocolate chips on top of nuts (if desired). Add the rest of the batter and top with the remaining pecan/sugar/cinnamon mix.

Bake for 40 minutes or until knife inserted into center comes out clean.

  1. Welcome to all the new Groupies! Glad to have you!!!

I made a pecan coffee cake from scratch over Thanksgiving. My mom has been bugging me ever since to make another. And I think she’s right. Maybe this weekend….

  2. coffee sounds amazing… just ordered a pound through the web site. thanks for sharing!

Holy Groupies!! That’s a lot more… It’s been so awesome to watch your business grow. I’m always so amazed and so darn proud of you and your crew, Sheri.

Keep up the GREAT WORK! 🙂

  3. I’m so disappointed to learn that Sheri and the Elves drink pretend coffee. It’s a good thing I fell in love with you all before I learned about this personality flaw!! 🙂

  4. Sheri- You have excellent tastes in coffee- so I took heed and ordered from Cameron’s. Thanks for sharing!!! 🙂 🙂

  5. That coffee cake sounds delicious! I’m going to have to try it.

Got my Valentine’s Day package already! WOW!!! Super fast. I love it. You always come up with great kits.

We’ve got more snow here today. I’m so over winter. Good thing I have a lot of knitting to keep me busy – and warm.

    Have a great weekend.

  6. It is nasty and raining outside…I would rather be working at TLE with the elves and the coffee and the coffee cake and all that yummy yarn!

  7. Hi Sheri, That cake looks wonderful. Wish I had some sour cream in the house. It’s snowing, expecting 20-30 inches, so I’m staying home. Will put on my list to make!
Valentine kit arrived today, absolutely beautiful!

    Have a nice weekend.

  8. Thanks for the tip on the coffee! We’re always looking for new flavors to try! I’ll be making the coffee cake this weekend – a treat for my husband. And welcome to all the new Loopy Groupies! Glad to see some other Michigan knitters/crocheters in the flock! Sheri and the Elves will take really good care of all of you!

  9. Welcome to all the new Loopy Groupies! Thank you for the coffee cake recipe. I know it is a winner. The coffee sounds yummy- will have to order some to have on hand.
Stay in, stay dry and knit a lot.

  10. I can almost smell the aroma of that coffee, and the cake, wow, gotta bake that up v soon. congrats to the many loopy groupies, probably enough to qualify for a special rep in congress.
It is snow, snow, more snow and even more snow (predicted up to 30″) flying in the DC area. They’re calling it Snowmageddon. Will gladly ship some to anyone who’d like it.

  11. I just received my first TLE order today, with a nice note from Sheri, & am now another aspiring Loopy Groupie! I have heard great things about you all for a while now, & can’t believe it took me so long. Thanks Sheri for taking such good care of everyone. The coffee & cake look yummy 🙂

  12. I’m making another run to the grocery store before the blizzard hits!!! I’ll be the only person in line buying sour cream and a cake mix…..everyone else will have toilet paper, milk and cat food in their carts! That cake looks soooo yummy! Happy Winter Weekend to Sheri and all the other knitters! (I hope I can’t make it into work tomorrow night!)

  13. Coffee cake looks great, will give it a try, but like everyone else, I am not running back to the grocery. The news keeps saying the snow is coming, but we are still waiting. Maybe this time…

  14. So, here’s my problem…I have almost none of those ingredients in the house. Hmmmm. I wasn’t planning to grocery shop tomorrow. Hmmm. That coffee cake looks awfully good.

  15. Can’t wait to make the coffee cake…you have the best recipes and they are easy enough to whip up in no time…

Enjoy the snow…and Welcome to the new Groupies……what a list!

  16. Congratulations and welcome to all the new Groupies! Wow—lots of new Groupies all in one go! We had an unexpected snowfall here yesterday—I had the knitting all right, but sure could have used some of that coffee cake….

  17. Welcome to all the new groupies! You are in good company.
When I first saw the recipe, I thought “Oh, great – something else I can’t eat thanks to Celiac disease” but as I read it, I realized that it could be modified. Betty Crocker and several others have a gluten-free cake mix!! I bet I might have to scale back the oil, but this could work. WOO HOO! I’m off to play in the kitchen (and enjoy some coffee, too).
    Thanks, Sheri!

  18. Hi Sheri, I am moving from Albuquerque to Chicago. What a joy it will be to finally be abe to bake without making high altitude adjustments (that almost never work). Will try your coffee cake receipe next week. Thank you!

  19. You have such yummy recipes… if I could just leave my knitting in the bag long enough to actually use my kitchen!!!!!

  20. That coffee cake looks great! Maybe tomorrow…

And I was thinking…just what do you call that many Groupies in one place. A herd? A gaggle? A flock would be too easy. Must come up with another name. I’ll work on that.

  21. I have to say: chocolate chips, optional? Well, not in my house! ^_^;

I took our dog on a super long walk on Saturday just so I could get cupcakes (expensive, but worth it). Yum. It might be better for my budget to make your tasty coffee cake, but it is better for my waistline not to have it in the house!

  22. I’ve just started drinking chocolate coffee from our local beanery – it really tastes like a treat, so I don’t need so much cake!

  23. I received my official groupie package last week and was so surprised and thrilled. Now I see my name in print for achieving this status. You really know how to make us all feel important. I’ve got house guests coming this week and what a perfect recipe for breakfast. The coffee cake sounds yummy.

  24. I received my official groupie package yesterday! It was so excited. I wanted to say thank you to Sheri and all of the elves! You have a wonderful shop and a gift for making us all feel special.
