Wondering ….?

… what I’m doing this weekend? I’m heading to Chicago for a Girls Weekend with College Girl, my favorite friend Janice, and her daughter K (who is not an official niece of mine, but I love her like one.) I’m also stopping by Dream in Color today, so maybe I’ll have some photos for you on Monday.

chicken-and-broccoli-pot-pie… about my favorite new pot pie recipe is? I’m glad you asked. It’s this Chicken and Broccoli Pot Pie.

4 cups chicken (cooked and cubed)
2 cans cream of mushroom soup
(or Cream of Chicken, or Cream of Potato)
1 large bag of frozen, chopped broccoli (thawed)
1 can low-fat Crescent Rolls
2 cups shredded cheddar cheese
1 can Durkees French Onions
(I use the big can, because I like them.)

Mix chicken, broccoli, soup, 1/2 can of onions, and 1 cup of cheddar cheese. Pour into 9 x 13 pan and bake for 30 minutes at 350 degrees. Remove from oven and add crescent strips:

Roll out crescent rolls into one big rectangle (pinching seams together) and cut into 6 strips, lengthwise.  Put 3 long strips lengthwise on top of the casserole. Cut remaining 3 strips into 6 shorter strips and put these on top in the other direction.

Return to oven for 15 minutes.  Add the rest of the cheese and onions to the top of the casserole and bake 5 more minutes.

Deliciousness.

  1. Baby, it’s cold outside (& inside), to borrow an expression! It’s time to figure out how I can knit, or probably crochet some fingerless mitts, pronto, with a left hand that is having problems. Glad I’m right-handed!

  2. I’m wondering how I’m supposed to get everything accomplished in time for Christmas. Going this weekend to get the tree. And with all the knitting and crocheting I’ve done for myself this year, I’m wondering why I never did finish that flippin’ scarf??? Now it’s cold and I don’t have a scarf (as the dog ate my other one). 🙁

  4. I am wondering whether or not we will get snow here in MD tomorrow. Regardless, I’ll stay inside. I’m planning a video and knitting day. I need to get crack-a-lackin’ on these Christmas presents I bought yarn for! Have a fun trip to Chicago. I heard on the news that they got snow yesterday. Should be beautiful albeit cold.

  5. If you get a chance this weekend here in Chicago – check out the One of a Kind Show at the Merchandise Mart. There is everything there from a $15 handmade necklace, to paper goods, to furniture to $100k art!

    Some of us will be there this afternoon (Friday). If we see you roaming around town, we will run up and say hi!

  6. Thanks for that receipe. I am definitely going to make it. I was wondering if anyone other than me finds that their fingers and neck muscles ache after a few minutes of knitting socks? I love knitting socks, but the pain is getting to me! Any advice?

    Apparently I need to start slowly.

  9. OOHHH God bless you with another pot pie recipe! Am making your original one tonight – my son’s future fiance is coming over. Made dark chocolate brownies last night after dinner – wanted to try one of your chocolate / peanut butter desserts but am squished for time lately. Am halfway through a Jared Flood Noro scarf for a friend. They REALLY come out nice and knit quick. Will copy and save this new recipe in my recipe file on my computer when I get home from work. AND have to start another pair of mitts – they are SO pretty for as quick and easy as they are to knit. And very feminine looking! You getting any deep dish pizza in Chicago? You can fax some here if you can….

  10. Yes, it is cold here in Chicago but hey, it is December! There is also Cornelia Arts Fair at 1800 W Cornelia . My husband will have his photo studio open and hopefully sell some prints!

  12. I’m wondering if I’ll get time this weekend to cast on (again!) for a Springtime in Philadelphia beret, or any other knitting project, for that matter — it’s shaping up to be a busy weekend. I’m also wondering what nice, popular thing I can get for $15 or less for our workplace “steal the Pollyanna gift” exchange at the end of next week. A trip to Trader Joe’s or the wine & spirits store next door should take care of that for me.
