Salted Caramel Rice Krispie Treats and the Moose Family!

I’m not sure those two topics have ever been in the same subject line before! 🙂 Rice Krispie Treats and Moose. But both happened to me last weekend, so you’re getting them together.

We did our annual Knitting/Sewing weekend in the mountains last weekend and my friend Janice from Iowa made the most amazing Rice Krispie Treats while we were there. I immediately thought of you all, because I knew you’d need this recipe. They were amazing. (I have known my friend Janice for 36 years and did not know that Rice Krispie Treats were her favorite dessert. How can that be?)

We also saw the moose family that seems to be hanging around up there this year, for some reason. They just walk down the drive as if they belong there. (And I guess they kind of do.) Here are some pictures that Paul took when he was up there. You should click on them to make them bigger. He was a safe distance away with a very good lens! But check out the eyelashes on that third photo. They are really fun creatures and we were all so glad to see them.

And here is a recipe that you just might want to make this weekend:

Salted Caramel Rice Krispie Treats (via Pinterest and the Butter with a Side of Bread blog)

6 cups Rice Krispie Cereal
1 (10 oz) package regular sized marshmallows (or 4 cups of the minis)
3 Tablespoons butter
2 Tablespoons milk
2 teaspoons coarse sea salt
1 package Kraft Caramel Bites (or regular Kraft Caramels)

Microwave marshmallows and butter for about 2 minutes. Stir the cereal into the bowl and mix well.

Transfer to a greased 9 x 13 pan and spread evenly.

Microwave the caramels and milk for about a minute, then stir. If not completely melted, microwave for another 15 seconds and mix again.

Once smooth, pour over the top of the Rice Krispies in the pan and smooth the caramel evenly over the top. Sprinkle on the sea salt and let cool.

Hope you all have a great weekend!

  1. Apparently there were quite a few moose including a bull with a nice rack over in the rmnp at Lake Isabelle/ Lake Brainard last summer. Love your shots. I didn’t have the right camera available when we saw them and we didn’t want there attention. 🙂

  2. We had two “teenaged” moose wandering about our village one spring many years ago. At night they swam to a nearby island. It was amazing to see them as they are so very large and funny looking!

  3. What a fun weekend it was!!!! I hate to admit that I ate more than my fair share of these!!! They are not safe to have in the kitchen!!!
