BLT Salad And Vintage Glampers

Happy Friday! We’re at Quilt Market in Pennsylvania today, walking miles and miles in their convention center to visit all of the fabric booths. Quilt Market is about four times larger than Yarn Market, and you feel it in your muscles by the end of the day! Finding plenty of pretty things to add to the shop, of course. I don’t know how these companies keep coming up with such fun collections, but the creativity seems to have no end. I’ll tell you more about it and post pictures next week.

In the meantime, have you picked out your Camp Loopy Fabric project yet? (See Wednesday’s blog post.) Fabric Elves Jenny and Jana are busy cutting batiks for you, and we are so looking forward to seeing your beautiful creations at the end of June. Your creativity seems to have no end as well! (We like that about you.)

Here’s a new Pinterest salad we tried and liked. I have another BLT in a Bowl Salad that I’ve share before (also very good). But I thought it was time to try a new one.

BLT-Salad-The-Loopy-EweBLT Salad

Lettuce (I always combine one head of Iceberg and a big batch of Romaine)
Avocados (as many or as few as you like. I used 2, peeled and sliced)
Cherry  Tomatoes
1 Cucumber (peeled and sliced)
1 lb. bacon (fried, drained, chopped into 1″ pieces)
Feta Cheese (about 3/4 cup)

Mix in a large bowl and add dressing.

1/2 cup olive oil
1/4 cup balsamic vinegar
1 tsp. mustard
1 Tbl. lemon juice
1/4 tsp. salt

Mix well and pour over salad. (We took the salad picture before tossing it in this delicious dressing – just in case you think the photo looks a little dry!)

Have a great weekend and I’ll be back to chat with you next week!

P.S. For those of you who like to add your Camping Groups to your Ravelry accounts or use them on your blog, here are the different Glampers that we’re using – feel free to blog or Rav them!
